Escargot is like other creatures, that is there are various species. Each one has its own outstanding characteristic. For example, l'escargot de Bourgogne: Helix Pomatia, is mainly collected in Eastern Europe. Helix Pomatia linne is the only escargot in France having the right of appellation “Escargot de Bourgogne”. Its flesh is light brown adorned with white ruffle . About its taste, it is absolutely appreciated by the French gourmets .

Classic escargot: Helix Lucorum, is one of escargot species always found and collected in Balkans and Turkey but difficult to find in France; only found in Alpes area. Its flesh is darker than one de Bourgogne and its shell is distinct.

Butter of Escargots a la Burgundy

Ingredients:


- butter 1 kg
- salt 25 g
- black pepper 5 g
- garlic 150g
- shallot 35g
- parsley 90g

 

 
 

First, finely chop garlic, shallot, parsley and mix all together (personal proportion can be modified). Then, place a little of this butter in each empty shell before pushing a cooked escargot into it. Fill the remaining space in the shell with butter. Put in the oven 200C or 390F to melt the butter. Escargots Appetizers

Ingredients for batter:


- egg 1
- water 1 C
- flour 1 C


Beat egg and water when it mix well, add flour and beat until smooth. Cover and set aside for at least 1 hour.

Ingredients for escargots


- olive oil 1 tb
- marinara sauce 1 1/2 C
- fresh escargots 24 escargots
- oil for deep frying


Heat saute pan and add olive oil, marinara sauce and snails. Simmer over low heat for 10 minutes or until mix thickens, remove from heat. Heat oil to 375F. Divide batter in half. Take 1 snail at a time from sauce, allowing some sauce to cling. Place in batter and deep fry until golden brown. Remove and pat dry and dip into other bowl of batter; repeat frying. Drain and serve.
