Choose a good fishmonger who can make your life more easier. Then look for clean well drained ice. Whole fish should be stored directly on the ice. There should be no staining or greying areas, indicating that the ice is not changed at frequent intervals. Nor should there be any pools of unidentifiable liquids. Look for clean, dry materials in the case of prepackaged fish .

Spend a little time to find a fishmonger that will respect your business. Ask questions! (Where did the fish come from? How was it caught? What was method of fishing ?) If you like the quality of the fish let them know, they want your repeat business!

  • Whole Fish

When buying a whole fish look for clear, shiny skin with tightly clinging scales, bright red grills and clean smell.

Try not to jab the fish before purchase.Flesh is also an important indication of freshness. The flesh should be firm and stretchy . It should be bounce back when you press it and leaving no notch. Remember ! Fresh fish don't have smell .Put the fish back if it has an odor.

Look for neat, moist, trim fillets . In addition, the coloring should be even. White flesh fish such as cod or bass should be white, with no darkened areas.
