indication of freshness. The flesh should be firm and stretchy . It
should be bounce back when you press it and leaving no notch. Remember
! Fresh fish don't have smell .Put the fish back if it has an odor.
Look for neat, moist, trim fillets . In addition, the coloring should
be even. White flesh fish such as cod or bass should be white, with
no darkened areas.
